Information about the wine

For this wine, Boris Champy used Pinot Noir from the En B½uf plot in Pommard. The plot is located in the heights of Pommard, just before Nantoux. The vine density is around 10,000, trained in the Guyot system. Boris Champy destemmed half of the grapes, resulting in 50% whole bunches. However, due to the vintage, which had botrytise, he destemmed the grapes completely, treated the stems with sulfur, and formed a millefeuille of layers of destemmed grapes and stems to ferment the grapes. He gently extracted the wine and aged it for twelve months, one-third in new oak in the pièce and two-thirds in one-year-old oak.

Nose

Boris Champy’s Pommard En B½uf 2021 is absolutely typical of the appellation. There are notes of plums, cherries, and raspberries, along with some sumac and barberries. Beneath these are notes of earth, forest floor, and undergrowth with a hint of dark chocolate. There’s also a touch of the finest oak. This leaves you wanting more.

Palate

On the palate, En B½uf is the only wine of the vintage with a fine, charming sweetness. You can also detect earthiness and dark fruit, undergrowth, and a hint of rock. Towards the finish, the acidity becomes increasingly present and agile, while the tannin remains quite dry. Because Champy largely avoided extraction, the wine is transparent and lean.

The 2021 Pommard En Boeuf is one of the firmer, more compact wines in the range, unwinding to reveal scents of plums, rose petals, sweet spices and orange, followed by a medium to full-bodied, ample and tightly wound palate that will reward a little bottle age.

The 2021 Pommard En Boeuf, which undergoes a slightly later bud break than nearby lieux-dits, has a transparent, fragrant bouquet with brambly red fruit, crushed stone and light camphor scents. The palate is medium-bodied with slightly drier tannins than the 2020. It’s structured and a little firm on the saline finish. The 2021 just needs a touch more elegance.
