In 2019, Boris Champy took over the domaine, founded in 1984, from Didier Montchovet. Champy, who previously managed estates such as Dominus in California, Louis Latour, and Clos de Lambrays, took over the domaine, which had already converted to organic and then biodynamic farming in the 1980s, making it the first Demeter-certified winery in Burgundy. The vineyard now covers twelve hectares in the once cooler Hautes-Côtes de Beaune, which Boris Champy sees as the future of Burgundy due to climate change. Grown at an altitude of 308 meters, the wine was aged in 228-liter piéce with a large proportion of new wood. After 12 months in barrels with regular batonnage for a creamy texture, the wine was transferred to steel tanks for a further three months before bottling.
Colour
Intense straw yellow, bright and clear.
Nose
Initially, the 2022 Bourgogne Hautes-Côtes de Beaune from Boris Champy appears reserved, before slowly evolving in the glass with increasing aeration. A generally mineral character flows from the glass, reminiscent of wet pebbles and blackboard chalk. Notes of citrus, lemon oil, and lemon balm hover above the delicate saltiness. Added to this are aromas of fresh herbs and crisp stone fruit such as green apples and pears. A young wine that would enjoy another year or two in the bottle.
Palate
On the palate, it is defined by its distinctive density and saline character. With a creamy structure, the long, lively, and ripe acidity extends far across the palate. An agile character, exciting and powerful with an elegant structure. Top-quality contours with a well-trained body, firm and sinewy with a medium build and fine, tightly woven, and polished tannins. A cool character despite the warm year, with good length and a delicately salty finish.
