Info
Sitta Maceracion is based on the indigenous Albariño grape variety. The vines are between 35 and 40 years old and are traditionally trained in pergola-style vines. This means that there are only 800 plants per hectare. The soils are predominantly granite, but with a layer of sand and clay, which leads to very good drainage. After the harvest, the grapes are completely destemmed. Alcoholic fermentation takes place spontaneously in steel tanks. The must is left on the skins for 15 days, and the pomace cap is pressed down twice a day to reduce the potential for oxidation. After pressing the skins in a pneumatic press, malolactic fermentation follows. The wine then matures on its fine lees for a further six months in steel tanks. It is clarified and filtered, which explains its clear and brilliant colour. The goal with this wine is never to go to extremes. It’s all about the clear and precise expression of the fruit, which is enhanced by a sensory-haptic level.

Bright golden yellow with orange and bright reflections
Nose
The 2021 Albariño, fermented on the skins, thrives on intense fragrance. Oriental spices such as cinnamon, saffron, and turmeric join the line-up, as do yellow stone fruits: mirabelle plum, apricot, and ripe peach. Above all, however, it thrives on orange peel and blossom. Bitter oranges and blood oranges also fit wonderfully into the picture. The nose is more reminiscent of Moorish-influenced Andalusia. The Albariño shines here with its cool finesse and intense fruit. Clove, cardamom, and juniper are also added from the spice cabinet. It is absolutely clean and without any notes of fermentation.
Palate
Even on the first sip, it impressively confirms the impression on the nose. Crystal clear and precise, it opens on the palate. The yellow and especially orange fruit come through perfectly. Orange juice at its best. A very fine tannin enlivens the palate with a little excitement. The acidity is restrained, but ensures a good flow. The slight bitterness wonderfully counters the fruit. It knows how to inspire without being demanding. Especially for beginners in the category of mash-fermented white wines, this is a good example to break down any possible barriers.
