The 2007 Millésimé Blanc de Noirs is a Pinot Noir from the best plots in Verzenay and Chamery in the Montagne de Reims, on loamy-sandy soils and calcareous Campania chalk. The average age of the vines is 55 years. This wine, made from 100% Pinot Noir, is only produced in particularly great vintages. 1,200 magnums were produced in 2007.

Rich golden yellow with delicate mousse.
Nose
The nose of the 2007 Millésimé Blanc de Noirs Premier Cru Extra Brut from Bonnet-Ponson changes like a chameleon, constantly revealing new facets. It allows a glimpse back to the time when Cyril’s father produced wines with a more mature style. Dried fruits, dried apricots, orange peel – dried or even candied – are added to this, along with pastry notes that also play more in the roasted spectrum: shortcrust pastry tart with salted butter, apricot jam, and mild spicy notes. All in all, a radiantly clear wine whose maturity should not be equated with aging.
Palate
On the first sip, the palate is illuminated by the finely shimmering mousseux, which lights up the throat like stardust. The fruit is reflected in the maturity more in the extract than in youthful impetuosity, and this is complemented by the mellow texture of the wine, which gives it its special melt. A champagne with enormous tranquility on the palate, complex, yet self-explanatory – not a seminar, yet still relevant for the exam. The magnum, to be sure, was a wisely chosen format for this extravaganza.
