Wine Information

A single-varietal Fromenteau (Pinot Gris) from the organically farmed Parcelle de Tuchots. 50% of the champagne comes from the 2017 harvest, 50% from the 2018 harvest. After mechanical pressing of the cuvée, the wine was aged partly in wood and partly in stainless steel. Tirage took place in April 2019. The disgorgement date is engraved on the base of the bottle. No dosage was added.

Colour

Light golden yellow with slight cloudiness, lively mousse.

Nose

The champagne appears lively and fragrant with a dense aroma of nutty apples and a hint of melon. This is accompanied by a slightly lactic note reminiscent of cream cheese, a touch of stone spice, and notes of lichen, pepper, and farmhouse bread. A distinctive and expressive bouquet.

Taste

On the palate, the Trop m’en faut! is spicy, juicy, and just as distinctive as the nose. This distinctiveness is what makes this champagne so special. It is precise and clearly defined, offering mellow and fresh stone fruit notes with a hint of pineapple, earthy, and herbal notes. It presents itself fresh and lively, soft in texture yet powerful in acidity.
