Information

The Saint-Romain Sous la Velle 2022 comes from the vineyard of the same name near the village and bordering Sous le Château to the north. Sous la Velle faces southeast and lies at an altitude of 355 to 380 meters. The vineyard, planted with so-called Colluviosol on Marne-de-Saint-Romain limestone, is planted with 60-year-old Chardonnay vines. The wine is hand-harvested, whole-bunch pressed, and fermented spontaneously in wood. Malolactic fermentation takes place spontaneously in the barrels. Aging lasts for ten to twelve months in a mix of 228-, 350-, and 500-liter barriques and tonneaux, of which no more than 10% are replaced annually. The wine is tasted daily, and the barrels are racked when Frédéric Buisson deems it appropriate. It is fined with bentonite and only very coarsely filtered. The wine was not sulfurized, hence the designation “Absolu.”

Intense straw yellow

Nose

The absence of sulphur is immediately noticeable in the Saint-Romain Sous la Velle Absolu 2022. The wine appears open like a barn door and offers an aromatic abundance of yellow apples and pears, apricots and nectarines, yellow plums, and ripe lemons and oranges. Added to this are hints of vanilla, apple peel, and pastry.

Palate

On the palate, the Sous la Velle Absolu is mouth-filling, juicy, inviting, tonic, and intense. The citrus fruits and yellow flesh are present. So are the acidity, the deep energy, the vibrant minerality, and the creaminess from the yeast ageing. Even the “simple” Sous la Velle is excellent in 2022, but cooler and even more reserved compared to this energetic and inviting charmer.
