About the wine

François de Nicolay is the name of the négoce business run by the family-owned Domaine Chandon de Briailles in Savigny-Lès-Beaune on the Côte de Beaune. This means that only wines that do not come from the family’s own property are produced and sold. The grapes, musts, and wines used come from certified organic or biodynamic vineyards or vineyards in conversion. The wines are matured in the Chandon et Briailles cellar and marketed under their own label. The Bourgogne Blanc “La Grande Châtelaine” comes from a plot with vines that are an average of 30 years old and have a vine density of 10,000 per hectare. It was fermented without added yeast for one to six months before being aged for a further 12 months in barriques (Sebastian Bordthäuser).

Nose

The 2021 Côtes de Beaune “La Grande Chatelaine” presents itself with noble restraint in its aroma. In addition to apple, quince, and lemon, we encounter linden blossom, a hint of anise, and chamomile. The fine and skillful use of wood is reflected in subtle aromas of vanilla, bread crust, and light tobacco. Even on the nose, this is a harmonious, elegant, and smooth white Burgundy.

Palate

This elegance is wonderfully conveyed to the tongue, where it shines with fruit and a fine acidity. With each sip, you’re encouraged to take another, and its subtle saltiness and minerality awaken the desire for culinary accompaniment. Enjoy from large Burgundy glasses, not too cold.
