Product description for Celler Credo Volaina 2019 (bio)

Celler Credo is the still wine project of sparkling wine producer Recaredo. Produced according to organic and biodynamic guidelines, La Volaina is the result of an initiative launched by Celler Credo together with the Granollers Natural History Museum to study the significance of butterflies (volainas). Made from 100% Parellada, the vines are located in Pla de Manlleu, at over 500 meters, one of the highest towns in Penedès. Winemaking and bottling take place in the Celler Credo winery. All work is done by hand, and alcoholic fermentation occurs spontaneously with natural yeasts. At a lean 9.5% ABV, it offers plenty of flavour at a low alcohol level.

Colour

Pale yellow with green highlights.

Nose

Greengages, the skins of small apples, and a large bunch of fresh herbs outline the nose of this distinctly Mediterranean wine. Freshly mown summer grapes, a pile of hay, and fresh herbal tea highlight the vegetal, tart character; fruit is largely absent. Currently characterized by delicate fermentation notes, it quickly blossoms with increasing aeration in the glass.

Palate

The herbaceous, spicy, tart impression continues on the palate. With leafy phenolics and a good tannin base, it is invigorating and salivating. The acidity shines with refined restraint, and the stimulatingly tart bitterness marks it as a clear child of its Mediterranean homeland. Notes of sage and citrus zest outline it aromatically.
