Boris Champy, a winemaker who has spent decades managing legendary wineries such as Dominus in California, Louis Latour, and Clos de Lambrays, enters the stage. In 2017, he took over Didier Montchovet’s domaine, founded in 1984. It is the first Demeter-certified winery in Burgundy! The estate currently comprises twelve hectares in the Hautes-Côtes de Beaune, which, for Boris Champy, represents the future of Burgundy due to climate change.
