Marjorie and Stéphane Gallet met at the agricultural college in Perpignan, but initially went their separate ways. It was their shared passion for horses and later for wine that brought them back together. At the time, Stéphane worked on a larger farm in Maury, while Marjorie gained her first practical experience in biodynamics in Calce near Gauby. In 2003, she borrowed money from friends and started her own business. The eponymous area was actually called Roc Blanc, named after a white quartz vein that protrudes from the black slate. However, Marjorie decided to rename it Roc des Anges, or Angel Rock. The winery is now one of the region’s top addresses and comprises 30 hectares of vines on a mosaic of diverse soils. The Australe is a single-vineyard wine and was planted in 2001. It comes from a massale selection of Serine, an old Syrah variety from the northern Rhône. It took 14 years instead of the usual seven for the vines to adapt to the hard, deep soils and develop healthy productivity.

Nose
The 2020 Australe from Domaine Roc des Anges smells of black berry confit, smoked meat, dark tobacco, and black olives. Its distinctively dark nose sings the praises of the concentration and density of the aromas, which flow impenetrably from the glass like black velvet.
Palate
The dark impression continues on the palate and is complemented by a bold bitter note, again reminiscent of tobacco and black olives. Stimulatingly tart, its phenolic properties point away from the primary fruit, enhancing its dark power on the palate for advanced winemakers. Stimulatingly tart, it reveals only the fruit pulp, while the acidity accelerates the velvety, dense nectar to its maximum, hinting at the estate’s diverse terroirs, which produce wines with subtle vibrancy and finesse even in the hottest part of France.
