Wine Information

0.98 hectares of vineyards are planted in the village of “Les Herses” on flint soil. The stony, southeast-facing terroir lends the wine a certain structure. The Pinot Noir vines are on average 45 years old, planted at a density of 7,700 vines per hectare, with a yield of 40 hectolitres. After hand-harvesting, 30% whole bunches and 70% destemmed grapes undergo a cold maceration for 2-3 days before fermentation. Subsequent maceration takes place over three weeks. After small reassemblies, the pomace is pressed at low pressure, and the first runs and the press juice are combined. Malolactic fermentation takes place in ceramic tanks and 50% in 228-liter wooden barrels on the fine lees. After drawing off the wine from the vats, it is further aged in stainless steel tanks to refine it while preserving its freshness. Bottling follows the lunar cycle.

Bright, elegant, and translucent cherry red.

Nose

The 2021 Sancerre Rouge “Les Heres” displays a red fruit nose, cherry, cherry stone, paired with some foliage and wild Mediterranean herbs that subtly hint and seduce the nose. A true firework of pure finesse and elegance is announced.

Palate

Extremely elegant, juicy, and full of finesse, it glides over the tongue with a polished tannin structure and a mineral-salty imprint. The invigorating acidity concludes with a wonderful finish, tempting you to drink another glass. The delicate fruit sweetness does its part to perfectly round off this finely fragrant Pinot.
