Wine Information

Le Paradis is a 14-hectare site with Oxford limestone and clay soils in Sancerre. Planchon owns 0.9 hectares of this south-facing vineyard. The vines are on average 55 years old, planted at a density of 7,700 vines per hectare, and yield around 45 hl/ha. After being hand-picked, the grapes are slowly pressed in a pneumatic press and left to settle for approximately 36 hours at a temperature below 10°C. Fermentation then occurs spontaneously, 70% in stainless steel tanks and 30% in 500-liter barrels. Aging on the fine lees takes place in the same tanks for a period that varies depending on the year, averaging ten to twelve months. Bottling then follows the lunar cycle.

Nose

The 2020 Sancerre Le Paradis is a fragrant and floral wine whose intensity only becomes apparent upon tasting. It smells of orange blossom, jasmine, broom, white and black currants, and elderberry. The wine has a very light hint of gooseberry, which quickly transitions into notes of lemon, lemon balm, and stone.

Palate

On the palate, the Sancerre appears lively, yet at the same time silky in acidity and creamy in texture. The base is limestone, barren, bleached white. But around it are the blossoms, blackcurrant, elderberry, and greengage, which combine with grapefruit zest and a distinct spice reminiscent of tobacco and earth. Ultimately, this is a long, intense, and silky wine full of elegance.
