The grapes for this cuvée were harvested on September 21 and 25, 2018, and on September 6, 2019. There was no maceration, and the yield from this gentle pressing is just 50 liters from 100 kg of grapes. For preliminary clarification, the must was held for up to 48 hours for natural sedimentation. The base wine is then fermented in neutral wooden barrels at 18-22°C. The process lasts up to four weeks and is completed with malolactic fermentation. The 2018 vintage matured in wooden barrels on the lees for one year and then in steel tanks on the fine lees for a further eight months. The 2019 base wine matured in wooden barrels on the lees for one year and then in large wooden tanks on the fine lees. The second fermentation took place on August 20, 2020. Depending on the batch, aging on the lees lasts at least 36 months. Disgorgement at 0g/l dosage in September 2023.
Colour
Sparkling straw yellow with green reflections, medium-sized perlage, and a long-lasting mousse.
Nose
This Grande Reserve exudes an incredible inner calm, despite so much coming together here. Rich yellow fruit meets intense green aromas. Its thirty months on the lees are undeniable, of course. This culminates in butterscotch and lemon tart aromas. Zest of bergamot and lime provide freshness. Grilled pineapple forms the basis of the intense fruit. Abundant herbal aromas bring it to life, with lemon balm, sage, and thyme to be discovered.
Palate
On the first sip, it reveals its drinkable, juicy side and also shows some edge. Initially, the mousse builds on the palate, creating a creamy texture. The yeasty and yellow aromas also noticeably develop. Smoky accents are also present. Then its acidity sets in, creating a positive restlessness. This break from the glaze exposes the base and makes room for its mineral side. Fruit and herbs then duel for minutes in the finish.

The NV Brut Nature Langenlois Blanc de Blancs Grosse Reserve is a blend of 60% Chardonnay, 36% Pinot Blanc and 4% Pinot Gris that spent 44 months on lees. It is based on equal parts of 2018 and 2019 base wines, which were fermented in oak. Raw shortcrust pastry and fresh, tart, ripe yellow apple combine into a seductive nose. The palate is rich with yeastiness, with that shortcrust vibe morphed into saltier, more full-flavored sourdough crumb. The finish tapers into bright, vivid, concentrated length that is taut yet creamy. A beautiful wine that will evolve and is already a star on the table. Disgorged: April 2024.
