The cultivation of these unique vineyards has been carried out according to biodynamic methods for several years. Carolin & H.O.’s credo: “For us, ripeness is a purification process: the aromas of the grape melt away and the aromas of the site, the soil, and the stone come to the fore. Only then does our genius loci – the Rhine terrace and the slate soil of the Roter Hang – come into its own.”
