Description
Romain and Damien Bouchard are the brothers behind the Domaine de l’Enclos. The two with the surnames so famous in Burgundy worked in their parents’ domaine from an early age and know Chablis very well. A few years ago, Romain was able to take over the Domaine de la Grande Chaume, which he converted directly to organic cultivation. The brothers have now merged this domaine with the parental one and founded l’Enclos. Here, too, the focus is on organic cultivation, which has been supplemented by biodynamic methods since 2017. A lot of effort is put into the vineyards, which include some of the fillet pieces of famous cru sites such as Fourchaume, Blanchot, or Les Clos. In the cellar, the two rely on a mixture of stainless steel and wooden barrels. This mixture gives the Chardonnays the perfect balance of freshness, power, and clarity, but also structure and elegant opulence.
