With Boris Champy, a winemaker enters the scene who, for decades, has managed legendary wineries such as Dominus in California, Louis Latour, and Clos de Lambrays. In 2017, he took over Didier Montchovet’s domaine, founded in 1984. It is the first Demeter-certified winery in Burgundy! The estate currently comprises twelve hectares in the Hautes-Côtes de Beaune, which, for Boris Champy, represents the future of Burgundy due to climate change. Champy, a master of the elegant use of wood, attaches particular importance to ensuring that the vines are located in a healthy environment with high biodiversity and extensive compensation areas.

The name says it all. For centuries up until the 1960s, a vertical press was common. Industrialization, as technology developed, then led to horizontal mechanical and, today, mostly pneumatic presses. Boris Champy uses precisely this technology for this series of his top wines. The Montage de Cras plot in Nantoux supplies the grapes for this wine. The name refers to the Celtic word for pebble. In addition to pebbles, the soil also contains plenty of clay. In the Cras, 3 of the 4 hectares are planted with vines, the rest is reforested to promote biodiversity. 382 stands for the altitude of the vineyards in the Hautes-Côtes de Beaune.

The vertical press is operated slowly and gently. The goal is a clear, highly concentrated must. Clarification of the must is avoided. For vinification, the must is transferred to 228-liter barrels, 50% of which are new. On average, the wine rests on its lees in barrels for 12 months. Decisions are made barrel by barrel. This is followed by a few months in tanks for the blend. The wine is bottled without fining or filtration.

After 2003, 2022 was the second warmest summer in Burgundy since temperature records began. A stark contrast to 2021. Boris is therefore proud of his entire collection, which has an ABV of less than 13%. The high altitudes of the Hautes-Côtes de Beaune take their toll here.

June was a very wet month, while the rest of the year is considered rather dry. The vines’ high resilience is once again worth highlighting. The high organic cover in the rows and the deep roots fully pay off. The vintage was counteracted with a high proportion of whole bunches in vinification. On average, 75% were pressed with whole bunches. The 2022 Pinot Noirs have lower acidity but a fleshy texture. The white wines have reached normal acidity levels and are no less impressive than other vintages.

Nose

The 2022 Chardonnay Verticale 382 still reveals a very restrained nose. It is earthy, peppery, and menthol-like. Its fruitiness timidly emerges in the form of grilled pineapple, mirabelle plum, and pear. On the vegetal side, it thrives on corn and even popcorn. White pepper, light tobacco leaves, and white chocolate give it distinct balsamic notes. It is earthy and spicy. Mint, eucalyptus, and coriander, along with parsley, provide a distinct herbal spice. This invigorates and refreshes.

Palate

On the palate, it displays all of these impressions seamlessly. Invigorating, carried by menthol-influenced freshness and supported by a perfectly integrated acidic structure. This makes it consistently stimulating. The fruitiness is barely evident at this young stage. The balsamic to earthy side, however, is much more evident alongside the herbal spice. It thrives on a warm center, which is, however, coolly enveloped and repeatedly interrupted by acidic peaks. A very enjoyable drink with high complexity and delicacy.
