The family that owns Alta Alella had already gained extensive experience in viticulture in the Priorat, Rioja, Ribera del Duero, and France before founding the winery in 1991. In the same year, they purchased old vineyards, planted several new ones, and renovated the old estate building. From the very beginning, the vineyards were based on organic farming. The grapes are harvested manually and in small crates, a process only a few top Cava producers can afford. All bottles are riddled by hand and filled without dosage. The small amount of residual sugar that remains comes from the grapes and corresponds to the Brut Nature classification.
