La Folleti\u00e8re<\/i> is a cider from Lesuffleur’s hometown of La Folleti\u00e8re-Abenon, with a topsoil of silt and brown flint, a subsoil of clay and flint, and a bedrock of chalk. Fifteen apple varieties were used, including 25% high-acid Rambeau and Ren\u00e9 Martin apples, 50% bittersweet Bedan, Binet Rouge, and other varieties, as well as 25% bitter-tannin varieties such as Mettais and Fr\u00e8quin. They come from the La Folleti\u00e8re orchard, which Benoit’s father planted in 1996 at a density of 700 half-stems per hectare. The residual sugar is around 40 grams. The cider was vinified using the traditional method. The apples were harvested and sorted by hand, and the juice fermented spontaneously. Bottling took place on March 10, 2020, and disgorged on September 9, 2023. <\/p>\nColor<\/h5>\n

Initially, it smells of cider apples with their skins, followed by rooibos, yeast, lime, some undergrowth, peach, and a hint of lambic. <\/p>\nPalate<\/h5>\n
On the palate, the cider oscillates between silky charm and pleasantly tart, musty apple notes. The acidity and tannin structure are silky, the sweetness is as well-integrated as in a Moselle wine, and the cider is full-bodied and sensual with notes of ripe yellow and red apples, a touch of quince and Reinclaude, as well as a hint of ginger and tobacco. The sparkling apple wine oscillates between sweet and tart notes, offering firmness while simultaneously appearing yeasty and fluffy. The acidity permeates the cider with a delicate nerve and contributes to the flow of this juicy, sweet, and tart drink. This is truly fine stuff!<\/p>\n
