Wine Information<\/h5>\n

This sparkling wine, produced according to the Metodo Classico<\/i> method, is made from the winery’s “M” and “F” plots and the “P” (Pinot Noir) and “C” (Chardonnay) grape varieties. Plot “M” comprises 0.6 hectares of Chardonnay, located at 320 meters above sea level in a southwest-facing position, with yellow-loamy, fairly deep soil rich in organic matter, high mineral content, and a sub-alkaline pH. Plot “F” comprises 0.4 hectares of Pinot Noir, located at 380 meters in a west-facing position, with yellow to red-loamy soil, high mineral content, and a sub-alkaline pH. After pressing, the grapes were spontaneously fermented in used oak barrels and aged there for seven months. The blend of 60% Pinot Noir and 40% Chardonnay took place on March 22, 2019. The sparkling wine then rested on the lees for 56 months. Disgorged “pas oper\u00e9,” meaning exclusively with the wine from the same batch, without the addition of any dosage or anything else. No cold stabilization, filtration, or fining took place. Disgorged on December 11, 2023.<\/p>\n

Color<\/h5>\n

Nose<\/h5>\n

The MFPC Pas Oper\u00e9<\/i> displays similarly ripe notes on the nose, as suggested by its color. It is a sparkling wine reminiscent of golden apples, which, together with vanilla, have found their way onto a warm puff pastry base. In addition to these inviting, well-proportioned notes, the wine also exhibits cool aspects. These include graphite, crushed stone, and a hint of nutshells and lemon zest.<\/p>\n

Palate<\/h5>\n

On the palate, the sparkling wine has a lively perlage and expressive aromas. Yellow apples are also present here, along with a few notes of cellar and cider apples thanks to the slightly oxidative approach that C\u00e0 del V\u00e9nt cultivates during the aging of the base wine. The wine is intense, juicy, and yellow-toned with hints of red berries, lemon seeds, almonds, nuts, and rock; delicate and elegant.<\/p>\n
