The grapes for the 2020 C\u00f4te d&#8217;Auxerre C\u00e9leste from Les vins d&#8217;Ath\u00e9na\u00efs come from the municipality of Saint-Bris, planted at an altitude of between 210 and 250 m. The east-, south-, and southwest-facing plots are planted on Kimmeridge limestone with high clay and limestone content. The whole bunches are fermented in a large, conical cuv\u00e9e with their own yeasts. Light pumping and racking allow for a gentle extraction of approximately two to three weeks. The wine then ages for 12 to 18 months in Burgundy pi\u00e8ces. <\/p>\n<h5>Colour<\/h5>\n<p> Intense ruby red with light violet reflections. <\/p>\n<h5>Nose<\/h5>\n<p> The initial nose of the 2020 C\u00f4te d&#8217;Auxerre C\u00e9leste from Les vins d&#8217;Ath\u00e9na\u00efs reveals plenty of sour cherry, rhubarb, and hibiscus. Then, a potpourri of berries emerges: small blueberries, cranberries, and raspberries. A touch of lemon balm and sorrel underscores the wine&#8217;s overall fresh character, which generously exudes its light-footed and fruity nature from the glass. A touch of white pepper with its cedar-citrus notes adds the finishing touch. <\/p>\n<h5>Palate<\/h5>\n<p> On the palate, the cathedral-like, profound fruit immediately wraps you around your finger. Interplaying with delicate floral notes of hollyhock and hibiscus and the stimulatingly tight, densely woven tannins, it is uncompromisingly hedonistic and unbridledly drinkable. Unpretentious and joyful at its best \u2013 you can have serious fun with this wine.
