Wine Information<\/h5>\n

This champagne is a blend of 70% Meunier, 20% Pinot Noir, and 10% Chardonnay from vineyards in the Marne Valley. The soils there are characterized by chalk, sand, limestone, marl, clay, and carbonate rock. The dosage is 4.8 grams. Tirage took place on March 11, 2019, and disgorgement in February 2023. <\/p>\n

Colour<\/h5>\n

: Light golden yellow with lively perlage. <\/p>\n

Nose<\/h5>\n

The “Totem” Blanc has a thoroughly classic, yet subtly sweet, champagne nose. It smells of ripe lemons, a touch of lemon curd and puff pastry, almonds, and nuts, but also of stone, herbs, and crisp, ripe pome fruit. With exposure to air, the aromas change, and the champagne takes on notes of oxidative maturation, reminiscent of crumbly apples and a hint of Fino Sherry. <\/p>\n

Palate<\/h5>\n

On the palate, the crumbly aromas combine with lemon and grapefruit peel. Here, too, there are hints of rock and herbs. The perlage is present and lively, and the acidity pushes the champagne forward with good punch, bringing a light tannic grip to the palate.<\/p>\n
