Wine Information<\/h5>\n

This champagne is a single-varietal Chardonnay from soils with sandy (chaillots) and loose clay (hautes vignes) in Ecueil, Montage de Reims. After pressing and spontaneous fermentation, the base wine was aged for nine months in 228-liter barrels. No stabilization, filtration, or fining was carried out. The wine was bottled in July 2020 and disgorged on May 10, 2023. It contains 2.5 grams of dosage. <\/p>\n

Colour<\/h5>\n

Intense straw yellow with relaxed mousse. <\/p>\n

Nose<\/h5>\n

The 2019 CHV smells exactly like what it is: a single-varietal Chardonnay Blanc de Blancs of recent vintage. Everything is aimed at freshness, with citrusy, tart, lively notes, some flint and limestone, and a very subtle hint of wood and pastry. It’s no miracle of aromas on the nose, but everything points to great freshness and bright fruit. <\/p>\n

Palate<\/h5>\n

This is confirmed on the palate. The Chaillots Hautes Vignes is a wine with plenty of punch, electrifying acidity, minerality, and plenty of citrus notes from the juice, zest, and seeds. Added to this is a chalky texture and, here too, a very finely balanced amount of wood and sourdough. Only in the long finish do you realize that 2.5 grams of dosage are at play here. They give the champagne a touch of lemon sorbet, which combines with the Chardonnay fruit of white-fleshed stone fruit.<\/p>\n
