Product description for Bonnet-Ponson Cuv\u00e9e perp\u00e9tuelle Ros\u00e9, RO22AB, Brut Nature NV (bio)<\/p>\n

The Cuv\u00e9e Perp\u00e9tuelle Ros\u00e9 Extra Brut is a blend of 50% Pinot Noir and 25% each of Chardonnay and Meunier from the base vintage of 2022. Added to this are 30% reserve wines from previous harvests, which are continuously blended using the solera method. The grapes come from 35 plots in Chamery, Vrigny, and Coulommes-la-Montagne \u2013 Premier Cru vineyards of the Petite Montagne in the western part of the Montagne de Reims. The average age of the vines is 35 years. The first fermentation takes place 70% in stainless steel tanks and 30% in oak barrels. Malolactic fermentation is a deliberate stylistic device. The red wine from Chamery used for this cuv\u00e9e matured in 400-liter barrels and contributed 10% to the blend. After at least four years of bottle aging, the champagne was given a dosage of 1.5 to 2.5 g. <\/p>\n

Light cherry red, radiant and clear with fine perlage. <\/p>\n

Nose<\/h5>\n

The nose is vibrant with red fruits: raspberries, wild strawberries, and sweet cherries dominate. Subtle pastry notes of fresh sourdough bread with quark underscore the complex aromas. <\/p>\n

Palate<\/h5>\n

The red fruits are reflected in the mouth, underscored by lactic and oxidative notes. The tannins of the 10 percent red wine add structure and depth. With juicy intensity and sustained punch, it combines drinking pleasure with subtle complexity.<\/p>\n
