Wine Information<\/h5>\n

The Chardonnay in this cuv\u00e9e comes from chalky soils (80%) with a clay layer, the Pinot Noir from clayey soils with a limestone and chalk base. The yield was 60 hl\/ha. The vines are around 40 years old and were ECOCERT-certified in 2012. 100% of the C\u0153ur de Cuv\u00e9e was used for the base wine. After natural settling, the juice was fermented 100% in 600-liter demi-muids and aged there for nine months. 50% Chardonnay and 50% Pinot Noir were used for the champagne. Around 75% came from 2018 and 25% from 2017. The wine aged in bottle for 36 months. There was no dosage. The champagne was disgorged by hand. <\/p>\n

Nose<\/h5>\n

As the label suggests, this is a champagne whose base wine was aged entirely in wood. The wood should not dominate, of course, but be present. This is also the case with Les Volies, whose fruit of apricots, peaches, yellow apples, and ripe Cedrat lemons is framed by a touch of wood, nuts, and marzipan. <\/p>\n

Palate<\/h5>\n

On the palate, the fruit, as well as the aging and the 36-month lees storage, ensure elegance, finesse, and complexity. Les Volies is a deep and powerful champagne that is just at the beginning of its development. On the palate, too, it combines stone fruit with fresh citrus notes and marzipan, lightly roasted nuts, and wood that never steals the spotlight but is nevertheless present as a component of the overall composition. This already seems to be a good fit, but it’s worth watching how this champagne develops.<\/p>\n
