Wine Information<\/h5>\n

The Cuv\u00e9e Particules Crayeuses is the current flagship Blanc de Blancs. The fruit comes from vines at least 40 years old in the C\u00f4tes des Blancs municipalities of Chouilly, Cramant, Avize, Oger, and Mesnil-sur-Oger. The grapes were harvested by hand and pressed in a traditional 4,000 kg Coquard press. Only the juice from the first run was used for fermentation. The wine fermented and aged spontaneously, partly in stainless steel tanks and partly in 600-liter demi-muids from Burgundy. Malolactic fermentation took place spontaneously after alcoholic fermentation. The base wines aged for six to 18 months, followed by 24 to 36 months of aging on the lees (sur lattes). Particules Crayeuses is a blend of two vintages plus 30% from a solera begun in 2013. The dosage is 5 g\/l. Unlike most other champagnes, the pressure is 4.5 bar instead of 6. <\/p>\n

From the very first moment, the Particules Crayeuses cuv\u00e9e is a true textbook Blanc de Blancs, with a chalky component and plenty of citrus power and brightness. At the same time, nobility and elegance, delicacy and sensuality are evident in the form of notes reminiscent of lemon curd and yellow plums, pear tart with vanilla, white nougat, cinnamon, and a touch of warm buttered toast. <\/p>\n

Palate<\/h5>\n

On the palate, this single-varietal Chardonnay from old vines is even more sensual, as the light dosage blends perfectly with the silky mousse and ripe yellow fruit, while the lower pressure creates a special creaminess. At the same time, the terroir provides a unique punch and plenty of power, as well as a lively and persistent acidity and mineral intensity on the palate. This is a luscious Blanc de Blancs Grand Cru that leaves you wanting more.<\/p>\n
