Gro\u00dfe Lage Hipping on the Roter Hang. In this case, Fuchs stands for the Fuchsloch plot and boasts forty-year-old vines. The plot is surrounded by trees, shrubs, and herbs. The grapes are selected by hand after the harvest. The must is trodden with the feet and cold macerated for 120 hours. Fermentation and lactic acid fermentation follow in old 600-liter oak barrels. The flor yeast then forms, and the wine is allowed to mature for a full 36 months. <\/p>\n<h5>Colour<\/h5>\n<p> Rich golden yellow with light reflections and slight cloudiness. <\/p>\n<h5>Nose<\/h5>\n<p> The 2020 example initially appears wild and impetuous. It lives up to its name. Unusual for a Riesling. With very subtle fruit, balsamic and ethereal aromas dominate. In some cases, the Fuchs Riesling also breaks new ground. The scent of currant bush wood emerges clearly. Kaffir lime leaves and hay. Coriander seeds and anise. Fennel, artichoke, and pea shoots. Coriander, lemon balm, and lemongrass then point more clearly to the grape variety in the classic sense. Lime zest and the skin of yellow apples appear alongside white peach, and they are still very evident in the aftertaste. The fruit, paired with these intense to green aromas, is very convincing. <\/p>\n<h5>Palate<\/h5>\n<p> The Fuchs is bone dry and grippy. Phenols and structure characterize it. For me, this is always clearly associated with memories of chewing apple peels. In doing so, it builds pressure, yet is very light-footed. A purist, close to nature and demanding. It grips, but is by no means strenuous. Little fruit and rather quiet on the palate. The wine is still cloudy and opens with a tropical spin of passion fruit and mango, which dissipates and delves into smooth, fresh yeast. The palate is sleek, taut and linear, somehow more spare and milder than its 2021 counterpart. It\u2019s also less buffered and stonier, finishing with captivating saltiness.
