The Pinot Noir grapes come from pre-harvest vineyards in the great vineyards. They are pressed in a basket press immediately after harvest and fermented spontaneously. The base wine is aged in used 500-liter German oak barrels for one year. After the second fermentation, it is allowed to mature on the lees for 36 months. This batch was disgorged in November 2023. <\/p>\n

Colour<\/h5>\n

Brilliant straw yellow, light to green reflections, small and restrainedly fine perlage with a rapidly fading mousse. <\/p>\n

Nose<\/h5>\n

A totally subtle opening. You can sense the cool finesse that is a defining characteristic of the wines of Julia Bertram and Benny Baltes. Initially restrained in its fruit, it leaves room for plenty of wet stones after a mild summer rain and dried herbs. Oregano, sage, a hint of mint, and even more pronounced sorrel and lemon balm spread throughout the glass. Incidentally, they also appear in this order of increasing intensity. Traces of sour raspberries and red and white currants ensure a pleasantly compact fruit presentation. Fennel and coriander seeds, along with white pepper, lend it a decent spice. A subtle smoky note provides a final accent. <\/p>\n

Palate<\/h5>\n

It presents itself strikingly and robustly on the palate. The fruit plays a very subordinate role here, too. Production and origin are its credo. At the beginning, it shows its charming side and thrives on the melting texture of its three years on the lees. The light herbal spice can prove itself in this moment with its contrasts. Then the acidity kicks in hard and cleans up. Clear the stage for this consistent, earthy, and mineral sip of sparkling wine. The pleasant, yet dominant acid structure groups itself with the salty finish. The tart fruitiness returns subtly on the finish, but the herbal aromas add a more prominent accent.<\/p>\n
