Wine Information<\/h5>\n

The Fixin comes from the Les Champs de Vosger vineyard below the village, which has light, sandy soils. J\u00e9r\u00f4me produces part of the S\u00e9lection massale from these 70-year-old vines. The vineyard work is organic, partly biodynamic, and therefore very labour-intensive. The Pinot Noir was largely destemmed and fermented in tanks. It was aged for twelve months in used oak barrels (228 l) with a small amount of new oak. J\u00e9r\u00f4me used exclusively indigenous yeasts; there was no fining, no enzymes, and only light filtration (where necessary), as well as no or very small doses of SO2. <\/p>\n

Nose<\/h5>\n

The Fixin appears clear and present with distinct aromas of wild strawberries, forest floor, and undergrowth, with a few hints of blood orange. The Pinot Noir combines a sweet note with a dark earthy note and freshness in its aroma. <\/p>\n

Palate<\/h5>\n

On the palate, the Fixin begins with dark fruit, with extract and extract sweetness. This appears juicy and charming. The acidity is still very much in the foreground, as is the dark spice. Towards the finish, the Pinot Noir appears increasingly drier, but a note of licorice becomes increasingly present.<\/p>\n
