Information<\/h5>\n

The vineyards of the Pierre Perc\u00e9e site are located on a limestone subsoil, complemented by marl and clay. Planted in 1978, the Aligot\u00e9 grows quite high on the slope. Aging took place on the full lees in used barrels with a small proportion of new wood. The wine was tasted daily, and the barrels were racked when Fr\u00e9d\u00e9ric Buisson deemed it appropriate. It was fined with bentonite and filtered very coarsely. Sulfur was added only at bottling, with a maximum total sulfite content of 40 to 50 mg\/l. 2022 is the first year this wine will be bottled. Previously, it was always sold in barrels. <\/p>\n

Nose<\/h5>\n

The Bourgone Aligot\u00e9 evokes notes of lemons, lemon peel, greengages, and apples, blending with tahini and some nuts. The wine appears fresh and firm with a light tannin. <\/p>\n

Palate<\/h5>\n

On the palate, the wine is mineral and mouthwateringly salty, with a little but precise fruit, primarily from the aforementioned lemons, lemon peel, greengages, and apples. Here, too, the wine has a nutty flavour, but above all, a touch of iodine and flint, with a wonderful crunch on the palate: it fizzes, there’s a very slight yeasty sweetness, and then the wine runs down the throat, bone dry.<\/p>\n
