In 2019, Boris Champy took over the domaine, founded by Didier Montchovet in 1984. Champy, who previously managed estates such as Dominus in California, Louis Latour, and Clos de Lambrays, took over the domaine, which had already converted to organic and then biodynamic farming in the 1980s, making it the first Demeter-certified winery in Burgundy. The vineyard now covers twelve hectares in the once cooler Hautes-C\u00f4tes de Beaune, which Boris Champy sees as the future of Burgundy due to climate change. The Cr\u00e9mant de Bourgogne, with its name Elevation 434, refers to the altitude at which the Pinot Blanc vines for this sparkling wine thrive. <\/p>\n

Nose<\/h5>\n

The 2021 Elevation 434 Cr\u00e9mant de Bourgogne Extra Brut by Boris Champy smells a bit like an oriental bazaar: dried fruit like dried apricots and pears, along with the slightly oxidative notes of sliced apples, honeydew melon, and orange blossom water. Shortbread and candied lemon peel alongside a cup of freshly brewed Darjeeling, as well as beeswax and quince jelly. <\/p>\n

Palate<\/h5>\n

On the first sip, the generous cascades of the nose are counteracted by its taut acidity and impetuous mousse. Aromatically, it is broader and more multifaceted on the palate than its structural and acid-accelerated form would suggest. The bridge is built by the creamy melt and the wild oxidative notes of apple or pear sparkling wine. An exciting sparkling wine made from Pinot Blanc.<\/p>\n
