Product description for Boris Champy Pommard En Boeuf AOP 2022 (bio)<\/p>\n

In 2019, Boris Champy took over the domaine, founded by Didier Montchovet in 1984. Champy, who previously managed estates such as Dominus in California, Louis Latour, and Clos de Lambrays, took over the domaine, which had already converted to organic and then biodynamic farming in the 1980s, making it the first Demeter-certified winery in Burgundy. The estate now covers twelve hectares in the once cooler Hautes-C\u00f4tes de Beaune, which, for Boris Champy, represents the future of Burgundy due to climate change. Climat En Boeuf is located in the upper part of Pommard, on a hillside in the middle of a well-ventilated valley. The plots are cultivated with traditional low-growing vines (10,000 vines\/ha) using simple Guyot pruning. The grapes are harvested by hand at optimal ripeness, followed by the gentle extraction of 70% whole bunches in wooden vats. The wines are aged for an average of 12 months, 50% of which in new barrels. <\/p>\n

Nose<\/h5>\n

The 2022 Pommard En Boeuf from Boris Champy smells like a bowl of freshly picked small wild raspberries, cassis, and mulberries. The fruit is joyful and juicy, only then do the typical earthy notes of undergrowth, precious woods like sandalwood, and hints of dark cocoa along with a spoonful of plum jam emerge. <\/p>\n

Palate<\/h5>\n

Ethereal with transparent fruit and a radiant nature, this Pommard is a more than joyful companion to gargle with, even in its fruity phase. A fine extract underlines the present fruit impression, while the ripe acidity permeates it from the first sip to the ethereally cool finish with a fruity, tart aftertaste. The gripping yet polished tannins act as the wingman of the acidity, putting everything on the drinking card.<\/p>\n

The 2022 Pommard En Boeuf is matured in 50% new oak with 70% whole bunches. The beautiful nose is quite floral, with dried rose petals infusing the cranberry and wild strawberry fruit. Fine mineralit\u00e9 here. The palate is medium-bodied with sappy red fruit. There\u2019s firm but not excessive grip – a mouth-filling Pommard with a delineated, vivid finish. Afford this 18 months in bottle to smooth those edges.
