Information about the wine<\/h5>\n

For this wine, Boris Champy used Pinot Noir from a west-facing plot in Aux Coucherias, just outside Bouze-l\u00e8s-Beaune. The 1er Cru vineyard was planted in the 1950s; the site is very steep and characterized by dark clay and limestone. Champy knows the vineyard from his time with Louis Jadot; the Jadot house produced the Clos de Couchereaux there. For Champy, it is the Clos Montchovet. The clos is isolated by trees and broom. The plot has been farmed biodynamically since 1985. The vine density is around 10,000, trained in the Guyot system. Boris Champy fermented 55% of the grapes as whole clusters and aged them in barriques for twelve months. However, due to the botrytist-like vintage, he completely destemmed the grapes, treated the stems with sulfur, and formed a millefeuille of layers of destemmed grapes and stalks to ferment the grapes. <\/p>\n

Boris Champy’s Beaune 1er Cru Aux Coucherias 2021 smells of stalks, earth, and the fruitiness of raspberries and wild strawberries, with hints of cherry and plum. This is underpinned by some gravel and lactic notes. A hint of violet and foliage lies above. <\/p>\n

Palate<\/h5>\n

Champy clearly brings out the Beaune character in Aux Coucherias. Here, you’ll find juice, fruit, earthiness, and, above all, freshness. The Pinot Noir appears cool with fairly supple tannins and offers a certain complexity. It offers plenty of sour fruit from cherries, barberries, and sumac. Added to that are green, yet ripe notes of stems. This vintage appears lean yet energetic, and currently still somewhat austere.<\/p>\n

The palate is medium-bodied with pliant tannins; it’s beautifully balanced with a sensual and very harmonious finish. Superb.
