Boris Champy only destemmed 70% of the grapes, so there was a portion of whole bunches. However, due to the botrytis-affected vintage, he completely destemmed the grapes, treated the stems with sulfur, and formed a millefeuille of layers of destemmed grapes and stems to ferment the grapes. It fermented spontaneously, extracted gently, and aged the wine in tonneaux for ten to twelve months before bottling without filtration.<\/p>\n<h5>Color<\/h5>\n<p>Quite transparent ruby red.<\/p>\n<h5>Nose<\/h5>\n<p>Boris Champy&#8217;s <i>Petit Aigle Savigny-Les-Beaune 2021<\/i> is a spicy and herbal wine with a fresh blend of red and black berries, as well as some sour cherry, juniper, and blossoms. Its aroma is as transparent as its color. There is hardly any extraction and little wood, but plenty of fruit, as befits the appellation.<\/p>\n<h5>Palate<\/h5>\n<p>On the palate, the <i>Savigny-l\u00e8s-Beaune<\/i> is also juicy and transparent, with a blend of red and dark berries and some sour cherry. The tannin is quite firm, the acidity lively.
