The Pinot Noir comes from the Premier Cru Les Lavi\u00e8res vineyard in Savigny-l\u00e8s-Beaune. The municipality is located about three and a half kilometers northwest of Beaune and, with 383 hectares, boasts one of the most extensive vineyards in the region. The Premier Cru Les Lavi\u00e8res vineyard is located towards Pernand-Vergelesses. Domaine Chandon de Briailles owns 2.61 hectares at the heart of the 17.66-hectare vineyard, which is named after the lav\u00e9s, flat limestone boulders that were formerly used as roof tiles in Burgundy. The vines are around 50 years old and planted in a south-southeast facing soil consisting of a mixture of sandstone, sand, and marl, with ferrous oolite in the upper part and reddish-brown, crumbly limestone in the lower part. Spontaneous fermentation took place in a wood-clad cuv\u00e9e with a fairly high proportion of whole-bunch grapes. The wine was then transferred by gravity into barriques and tonneaux with a small proportion of new wood. This was followed by around 14 months of aging without further movement or racking. Bottling took place with a minimal amount of sulfur, mostly directly from the barrel. <\/p>\n

It is impressive how aromatically consistent this Pinot Noir from the single vineyard Les Lavi\u00e8res in Savigny-l\u00e8s-Beaune has become over the years. The 2019 vintage also clearly reveals aromas of plums, peonies, and violets, along with a hint of lavender. At this young stage, it’s even reminiscent of a young Brouilly, with its violet floral notes, fresh, juicy dark fruit, yeast, and hint of iron. In any case, it’s enjoyable from the very first moment, and smells very inviting and appetizing. <\/p>\n

Palate<\/h5>\n

On the palate, Les Lavi\u00e8res is juicy, silky, and wonderfully spicy. The 2019 vintage seems almost like a blend of 2017 and 2018. It offers plenty of ripeness and a sweet fruity touch, but also tart herbal notes and spices like licorice. The tannin is fine and polished, a few centimetres provide grip, firmness, and freshness, and the acidity is lively, clear, and mineral. The wine’s spiciness is clearly noticeable again in the silky finish. It is reminiscent of licorice, foliage and a little bit of undergrowth and dark pepper.<\/p>\n
