The grapes for the Vinothek Reserve come from &#8220;Die Sieben Reihen,&#8221; an extremely steep and well-ventilated plot with blue limestone marl soil. The old vines there are particularly small and produce concentrated, dense musts. Harvested by hand and fermented spontaneously, the must is aged for 36 months in neutral wooden barrels. <\/p>\n<h5>Colour<\/h5>\n<p> Straw yellow with a silvery rim. <\/p>\n<h5>Nose<\/h5>\n<p> The 2019 Ried Zieregg Vinothek Reserve Sauvignon Blanc from Tement is taciturn, so a carafe or a large, expensive glass is recommended, or better yet, both. Then you have to wait, because this wine is under no time pressure. Why should you? Rather, it reflects impatience and one&#8217;s own expectations, only slowly beginning to speak of the future and its potential, which at the moment is only vaguely visible in the glass. Aromatically, it is enormously disciplined for a Sauvignon Blanc, with herbs setting the pace: sage, lemon balm, ginger, and the citrus-cedary notes of first-class white pepper mingle with the timid fruit. Grapefruit zest, lemon blossom, cassis leaf, and green mango fill its tray, along with saline notes of crushed oyster shells and wet blackboard chalk. <\/p>\n<h5>Palate<\/h5>\n<p> On the first sip, the Zieregg Reserve is compact, condensed almost to the point of painful sparsity. Like a mille-feuille, it peels away layer upon layer on the palate, unpacking document after document like a WinZip file, and with sufficient aeration and patience, it achieves its gripping greatness. In its youth, a quiet wine that doesn&#8217;t run around the Christmas tree with its striking aromatics, but demands time. Time to engage with one of the great wines of this grape variety. A cohesive, extremely complex presentation with immense tension and high density despite the defined, muscular, never bolid body. The acidity acts as the wine&#8217;s pulse, which is why the tart, animating and grippy phenolics nestle in, roughening it up a bit at the edge of the tongue, which makes you want to refill your glass quickly. Drinking it now would be infanticide, but it&#8217;s incredibly ripping.
