Informationen zum Wein<\/h5>\n

Der Les Montchenevaux au Levant stammt von einer Einzellage in Oger. Die Trauben wurden von Hand gelesen und in einer traditionellen 4.000 kg schweren Coquard-Presse gepresst. F\u00fcr die G\u00e4rung wurde nur der Saft aus dem ersten Lauf verwendet. Es wurde spontan in 600-Liter-demi-muids aus dem Burgund vergoren und ausgebaut. Die malolaktische G\u00e4rung erfolgte spontan nach der alkoholischen G\u00e4rung. Der Ausbau sur lattes dauerte mindestens f\u00fcnf Jahre. Die Flaschen wurden von Hand degorgiert und nicht dosiert. <\/p>\n

Der Les Montchenevaux au Levant ist ein Champagner von reifem Traubenmaterial, das an reife gelbe \u00c4pfel, Quitten, Pflaumen, Nektarinen und Orangen, aber auch an D\u00f6rrobst erinnert. Das Obst bringt ein wenig Fruchtester mit. Erg\u00e4nzt wird der saftig reife Eindruck durch recht dunkel gebranntes Krokant, Tabak und Noten vom Holzausbau. <\/p>\n

Gaumen<\/h5>\n

Am Gaumen zeigt sich der Champagner ebenfalls reif und ausladend, gleichzeitig seidig und rund. Die S\u00e4ure wirkt hier zur\u00fcckgenommen und reif, das Mundgef\u00fchl erinnert durchaus an Fruchtsaft. Insgesamt ist das ein weiniger, reifer und sinnlicher Schaumwein, was durch den dezenten Druck von 4,5 bar statt der \u00fcblichen 6 bar noch unterstrichen wird.<\/p>\n
