Produktbeschreibung f\u00fcr Clandestin BOR\u00c9AL, Brut Nature 2022 <\/p>\n

Clandestin ist das Gemeinschaftsprojekt von Bertrand Gautherot (Vouette & Sorb\u00e9e) und dem jungen Burgunder Benoit Dousset, mit dem Ziel, einen einzigartigen Terroir-Champagner aus der Aube an der C\u00f4te des Bars zu schaffen. Die Trauben stammen ausschlie\u00dflich aus biodynamisch bewirtschafteten Weinbergen, die denselben hohen Standards wie Vouette & Sorb\u00e9e folgen. Mindestens 20 Jahre alte Reben und eine einheitliche Sonneneinstrahlung sind Voraussetzung. Nur reife, einwandfreie Trauben werden verarbeitet \u2013 eine Dosage ist daher \u00fcberfl\u00fcssig. Im Keller wird auf Pumpen verzichtet, mit Naturhefen vergoren und jede Parzelle separat vinifiziert. Die Weine lagern in neutralen Eichenf\u00e4ssern (300\u2013500 l) und werden nach 15 Monaten ohne Filtration und Dosage abgef\u00fcllt. Der BOR\u00c9AL besteht zu 100 % aus Pinot Noir, gewachsen in drei Parzellen mit \u00e4hnlichen B\u00f6den aus Lehm und Kalkstein mit rein n\u00f6rdlicher Ausrichtung. Spontan vergoren und f\u00fcr zehn Monate im Holz ausgebaut, wurde er nach 15 Monaten Hefelager im September 2024 degorgiert. <\/p>\n

Nase<\/h5>\n

Die Nase oszilliert zwischen moderater Autolyse und zart zitrischen Noten. Sauerteig-Brotrinde, gesalzene Haseln\u00fcsse, gr\u00fcne Mandeln und warmer Zopf sind unterlegt von Zitruszesten, die an Cedro, Orangeat und rotfruchtig herbe Preiselbeeren erinnern. Dazu kommen distinktiv saline Noten, die einen unmittelbar ans Meer versetzen \u2013 sechs Austern inklusive. <\/p>\n

Mund<\/h5>\n

Im Antrunk ist der 2022 BOR\u00c9AL von Champagne Clandestin unmittelbar pr\u00e4sent mit seiner satten, saftigen Frucht, die aus der vollen Reife des 22er-Jahrgangs resultiert. Leicht rotfruchtige Noten, eine cremige Textur mit kleinperligem Mousseux und vielschichtigem Naturell skizzieren ihn gro\u00dfz\u00fcgig im Antrunk. Im Nachhall zeigt er sich reduzierter, beinahe puristisch \u2013 seine reife Frucht trifft auf eine pr\u00e4zise, packende Mineralik. Ein markanter Champagner, der karge Strenge mit Offenherzigkeit verbindet und gleichzeitig fordernd wie einladend wirkt.<\/p>\n
