Christoph Raffelt 14.2.2023: Der Nebbiolo stammt aus der Lage Fausoni in Neive. Fausoni liegt direkt angrenzend an die Stadt Neive in s\u00fcdwestlicher Exposition. Die Reben in der Parzelle sind 48 Jahre alt. Der durchschnittliche Ertrag liegt bei 40 hl\/ha. Alle Lagen von Sottimano werden seit den 1970er Jahren biologisch bewirtschaftet. Die Frucht wurde entrappt und bis zu 60 Tagen vergoren bzw. auf der Maische belassen, wobei der Tresterhut w\u00e4hrend der G\u00e4rung in offenen Edelstahlg\u00e4rst\u00e4ndern regelm\u00e4\u00dfig untergesto\u00dfen wurde. Ausgebaut wird der Wein seit 2020 in gro\u00dfen, leicht konisch zulaufenden Botti. Die Reifezeit im Fass betrug rund 24 Monate. <\/p>\n

2021 Barbaresco Fausoni duftet herrlich tiefgr\u00fcndig und anziehend. Sauerkirsche pr\u00e4gt ihn dabei sp\u00fcrbar, aber l\u00e4sst auch Raum f\u00fcr andere, deutliche dunklere Aromen. Pflaume, Maulbeere, fast Schlehe kommen mir dabei in den Sinn. Er wirkt erdig und kreidig. Das erinnert an kalkiges Wasser oder eben nasse Kreide. Feine Z\u00fcge Unterholz sowie harzige Baumrinde. Seien W\u00fcrzigkeit h\u00e4lt er noch etwas zur\u00fcck. Nur schwach kommen Piment und Pfeffer zum Vorschein. Etwas Rosmarin und Liebst\u00f6ckel sorgen f\u00fcr einen Kr\u00e4uterkick. <\/p>\n

Gaumen<\/h5>\n

Aromatisch konzentriert und von einem feinporigen Tannin untermalt bereitet er einen beeindruckenden Auftakt. Dabei ist er leichten Fu\u00dfes unterwegs. Das Tannin ist essenziell und perfekt balanciert. Dies sorgt f\u00fcr Ecken und Kanten sowie eine aromatische Bindung der Frucht an Bitterstoffe. Sein k\u00fchler Untergrund, diese Finesse, diese subtile L\u00e4nge wissen zu \u00fcberzeugen. Ebenso subtil bauen sich auch nach und nach verschiedene Kr\u00e4uter auf, die viel W\u00fcrze und Frische mit einbringen. Liebst\u00f6ckel, Minze, Petersilie und Rosmarin. Wei\u00dfer Pfeffer sowie ein Hauch Kaffee leisten ebenso ihren Anteil daran.<\/p>\n
