Nase<\/h5>\n

Zun\u00e4chst wirkt er zur\u00fcckhaltend und leise. Eine Tendenz zum Klebstoff kann er nicht absch\u00fctteln. Wild und nat\u00fcrlich. Der Schleier der Reduktion l\u00e4sst die Frucht noch im Verborgenen zur\u00fcck. Tiefgr\u00fcndig. Ehrlich. Das Vermeiden von Schwefel l\u00e4sst einen absoluten Purismus zu. Seine florale Seite \u2013 gepr\u00e4gt von Mandel- und Apfelbl\u00fcte \u2013 baut sich vehement auf und hebt sich auf ein Podest. Eingelegte Kirschen und wei\u00dfe Johannisbeere neben Himbeere bauen sich dann langsam auf. Reife Birne sowie karamellisierte Quitte erden ihn dann wieder. Herbe Zitrone sorgt f\u00fcr Bitterstoffe. Lavendel, Oregano und Thymian zeigen sich in getrockneter Form neben einer kontrastreichen etherischen Frische. Wei\u00dfer Pfeffer, Kardamom und Piment runden ihn w\u00fcrzig ab. <\/p>\n

Gaumen<\/h5>\n

Mit dem ersten Schluck baut er sich stoffig und dicht auf. Keineswegs geht er in die Breite. Er ist absolut schlank und geradlinig. 10% Vol. Alkohol ist schon enorm leichtf\u00fc\u00dfig, was sich aber in einer fehlenden Mitte straft. Er t\u00e4nzelt \u00fcber die Zunge. Seine Bitternoten, vor allem herber Apfel, pr\u00e4gen ihn phenolisch. Seine Bitterstoffe wirken mir etwas zu unreif und mit einem Hang zum gr\u00fcn, so dass hier Trinkfluss in Form von Balance verloren geht. Alles in allem bleibt er aber druckvoll und spannend durch seine intensive Aromatik im Hintergrund. Glatt und seidig mit vielen Ecken und Kanten. Im Nachhall dann nussig und mit einer spitzen S\u00e4ure versehen. <\/p>\n
