F\u00fcr diesen Wein nutzte Boris Champy Pinot Noir aus der Parzelle En B\u00bduf in Pommard. Die Parzelle befindet sich in den H\u00f6hen von Pommard kurz vor Nantoux. Die Stockdichte liegt bei rund 10.000 in Guyot-Erziehung. Boris Champy hat die Trauben zur H\u00e4lfte entrappt, es gibt also 50 % Ganztrauben. Auf Grund des Jahrgangs, in dem es Botryrtis gab, hat er jedoch die Trauben komplett entrappt, die Stile mit Schwefel behandelt und eine Millefeuille aus Schichten entrappter Trauben und Rappen geformt, um die Trauben zu verg\u00e4ren. Er hat schonend extrahiert und den Wein \u00fcber zw\u00f6lf Monate zu einem Drittel in neuem Holz im Pi\u00e8ce und zu zwei Dritteln in einj\u00e4hrigem Holz ausgebaut. <\/p>\n

Boris Champys Pommard En B\u00bduf 2021 wirkt absolut typisch f\u00fcr die Appellation. Es gibt Noten von Zwetschgen, Kirschen und Himbeeren, dazu etwas Sumach und Berberitzen. Darunter findet man Noten von Erde, Waldboden und Unterholz mit etwas dunkler Schokolade. Dazu kommt ein Touch von bestem Eichenholz. Das macht Lust auf mehr. <\/p>\n

Gaumen<\/h5>\n

Am Gaumen besitzt der En B\u00bduf als einziger Wein des Jahrgangs eine feine charmante S\u00fc\u00dfe. Man findet auch das Erdige und Dunkelfruchtige, das Unterholz und etwas Gestein. Richtung Finale wird die S\u00e4ure immer pr\u00e4senter und agiler, das Tannin bleibt dabei recht trocken, der Wein zeigt sich, weil Champy weitgehend auf Extraktion verzichtet hat, transparent und schlank.\u00a0<\/p>\n
