Weingut<\/h5>\n

Das Weingut von Cyril Jeaunaux liegt ein wenig abseits der \u00fcblichen Wege in der Champagne. Der Ort Talus Saint Prix findet sich auf halbem Wege von Vertus (C\u00f4te des Blancs) nach S\u00e9zanne (C\u00f4te de S\u00e9zanne) im Vall\u00e9e du Petit Morin, und auch da findet man die Gemeinde, die nur \u00fcber 39 Hektar verf\u00fcgt, eher \u00fcber Umwege. Das ist deshalb wichtig, weil auch das Terroir, auf dem Cyril seine 5,7 Hektar bewirtschaftet, sich deutlich von der Kreide der C\u00f4te des Blancs unterscheidet. Nicht die Kreide ist hier bestimmend, sondern wei\u00dfer Mergel, Kalkstein und vor allem Feuerstein. Das f\u00fchrt dazu, dass 70 % seiner Weinberge mit Pinot Meunier bestockt sind. Seit 2005 werden sie organisch bewirtschaftet, seit 2010 wendet er biodynamische Methoden an, und seit 2015 befinden sich die Weinberge auch offiziell in Konversion. Cyril presst die Trauben mit zwei eigenen Conquard-Pressen und baut die Weine im Edelstahl wie auch in alten Holzf\u00e4ssern aus, wobei eine malolaktische G\u00e4rung nicht bewusst herbeigef\u00fchrt wird. <\/p>\n

Wein<\/h5>\n

80 % Chardonnay und 20 % Pinot Noir von Rebst\u00f6cken, die rund 60 Jahre alt sind. Im Boden findet sich Lehm, Kalk, Kreide und viel Feuerstein. Der Champagner basiert auf den Jahrg\u00e4ngen 2013 mit 70 % sowie 2012 mit 30 %. Der Ausbau erfolgte im Edelstahl und im Holz, der Wein lag 3,5 Jahre sur lattes, und die Dosage liegt bei 6 Gramm. <\/p>\n

Nase<\/h5>\n

Der Fil de Brume Brut von Cyriel Jeaunaux \u00f6ffnet sich mit feinen Hefe- und Brioche-Noten. Man denkt unwillk\u00fcrlich an eine Pariser P\u00e2tisserie, in der vorwiegend Tartes mit Zitronen und Steinobst gebacken werden. Im Hintergrund finden sich ein wenig Kalk- und Kreidestaub, bedeckt mit Bl\u00fcten von Wiesenblumen. Der Champagner ist duftig, lebendig und elegant. <\/p>\n

Gaumen<\/h5>\n

Am Gaumen zeigt sich der Fil de Brume, was im Franz\u00f6sischen so viel wie Nebelschwaden hei\u00dft, die morgens oft durchs kleine Tal ziehen, zun\u00e4chst deutlich knackiger und mit mehr Druck, als die Brioche-Nase verraten hat. Das ist wunderbar; denn neben dem fast fleischigen Charakter ist der Champagner frisch und hell sowie klar, zeigt eine leichte W\u00fcrze und ein Wechselspiel von reifer Frucht und angenehmer Bitternote, die fast tonisch erscheint. Der Winzer hat es auf rondeur und gourmandise angelegt, und genau das ist ihm ausgezeichnet gelungen.<\/p>\n
