Information zum Wein<\/h5>\n

Der Chardonnay dieser Cuv\u00e9e stammt von Kreideb\u00f6den (80 %) mit Lehmauflage, der Pinot Noir von lehmigeren B\u00f6den mit Kalk- und Kreideunterlage. Der Ertrag lag bei 60 hl\/ha. Die Weinreben sind rund 40 Jahre alt und wurden 2012 nach ECOCERT zertifiziert. F\u00fcr den Grundwein wurde 100 % der C\u0153ur de Cuv\u00e9e genutzt. Nach dem nat\u00fcrlichen Absetzen wurde der Saft zu 100 % in Demi-Muids von 600 Litern vergoren und neun Monate dort ausgebaut. F\u00fcr den Champagner wurden 50 % Chardonnay und 50 % Pinot Noir genutzt. Rund 75 % stammen aus 2018 und 25 % aus 2017. Auf der Flasche reifte der Wein f\u00fcr 36 Monate. Es gab keine Dosage. Der Champagner wurde von Hand degorgiert. <\/p>\n

Nase<\/h5>\n

Wie das Etikett schon andeutet, handelt es sich hier um einen Champagner, dessen Grundwein komplett im Holz ausgebaut wurde. Das Holz sollte nat\u00fcrlich nicht dominieren, aber pr\u00e4sent sein. So ist es auch beim Les Volies, dessen Frucht von Aprikosen, Pfirsichen, gelben \u00c4pfeln und reifen Cedrat-Zitronen von ein wenig Holz, N\u00fcssen und Marzipan gerahmt wird. <\/p>\n

Gaumen<\/h5>\n

Am Gaumen sorgen die Frucht wie auch der Ausbau und das 36-monatige Hefelager f\u00fcr Eleganz, Finesse und Komplexit\u00e4t. Der Les Volies ist ein tiefer und kraftvoller Champagner, der gerade erst am Anfang seiner Entwicklung steht. Er verbindet auch am Gaumen vor allem Steinobst mit zitrisch frischen Noten und Marzipan, leicht ger\u00f6steten N\u00fcssen und einem Holz, das sich nie in den Vordergrund mogelt und trotzdem als Komponente des Gesamtwerks pr\u00e4sent ist. Das wirkt jetzt schon stimmig, aber man sollte verfolgen, wie sich dieser Champagner weiterentwickelt.<\/p>\n
