Sebastian Bordth\u00e4user: Am Gaumen oszilliert der Cott\u00e1 zwischen einladender Gastfreundlichkeit und jugendlichem Starrsinn, der sich jedoch schnell als Attit\u00fcde entpuppt. Die straffen, fast kaubaren Tannine sorgen f\u00fcr den Sottimano typischen Biss und kleiden den jugendlich leuchtenden S\u00e4urenerv in purpurnes Ornat. Das Gesamtkonzept verbindet vertikalen Trinkzug mit einem gastronomisch attraktivem Trinkfenster. <\/p>\n

Christoph Raffelt\u00a0vom 14.02.2023: Der Nebbiolo stammt aus der Lage Cott\u00e1 in Neive. Der durchschnittliche Ertrag liegt bei 15 hl\/ha. Die Lage wird von Sottimano seit den 1970ern biologisch bewirtschaftet. Die Frucht wurde entrappt und bis zu 60 Tagen vergoren bzw. auf der Maische belassen, wobei der Tresterhut w\u00e4hrend der G\u00e4rung in offenen Edelstahlg\u00e4rst\u00e4ndern regelm\u00e4\u00dfig untergesto\u00dfen wurde. Ausgebaut wird der Wein seit 2020 in gro\u00dfen, leicht konisch zulaufenden Botti. Die Reifezeit im Fass betrug rund 24 Monate. <\/p>\n

Nase<\/h5>\n

Auf markante und w\u00fcrzige Seite startet der 2021 Barbaresco Cotta. Auf der einen Seite stehen Hagebutte, Walderdbeere, Himbeere sowie etwas Sauerkirsche. Dieser roten, fruchtigen Seite w\u00fcrde ich auch Berberitze und Rooibos-Tee sowie Cranberry zuordnen. Roter Pfeffer unterst\u00fctzt diese Facette des Weines noch zus\u00e4tzlich. Dem gegen\u00fcber stehen auf der anderen Seite erdig und markante Aromen. Zu entdecken sind Unterholz, etwas Waldboden sowie reichlich etherische Tannennadeln. Zedernholz, Zigarrenkiste sowie helle Tabakbl\u00e4tter sorgen f\u00fcr reichlich balsamische Momente. Schwarzer Pfeffer und Wacholder vereinen die W\u00fcrze mit Frische. Ebenso wichtig sind noch die mediterranen Aspekte des Weines, die sich am besten mit Rosmarin und Thymian beschreiben lassen. Frisch gehackte Haseln\u00fcsse kommen mit Sauerstoff zu einer Omnipr\u00e4senz im Glas. Zudem entwickelt er mit der Zeit einer sehr Dominate, kalkige Aromatik, die sehr vielversprechend ist. <\/p>\n

Gaumen<\/h5>\n

Mit dem ersten kombiniert er direkt auf hohem Niveau Eleganz mit Tannin und Mineralik. Seine Frucht wirkt warm und samtig. Diese kommt noch v\u00f6llig ohne Ecken und Kanten aus. Hagebutte, Rooibos und Walderdbeere sind dabei die pr\u00e4senteren Vertreter. Das Tannin kommt dann zum Durchbruch und kleidet den Mundraub sehr subtil aus. Seine nussige Aromatik und die angenehmen Bitterstoffe haften sich daran an. Alles wohl dosiert und in einer Symbiose zueinander. Gerade Haselnuss und Walnuss sind dabei sehr sch\u00f6n zu erkennen. Immer wieder wirkt er k\u00fchlend und die mineralischen Charakterz\u00fcge kommen voll durch. Seine w\u00fcrzigen Seiten zeigt er wieder voll und ganz im Nachhall.<\/p>\n
