Die straffen, fast kaubaren Tannine sorgen f\u00fcr den Sottimano typischen Biss und kleiden den jugendlich leuchtenden S\u00e4urenerv in purpurnes Ornat. Das Gesamtkonzept verbindet vertikalen Trinkzug mit einem gastronomisch attraktivem Trinkfenster. Die Azienda Agricola Sottimano wurde in den 60er Jahre von Rino Sottimano gekauft und liegt inmitten der Lage Cott\u00e0. In den folgenden Jahren konnte sie sukzessive um die Crus Curr\u00e1, Fausoni, Basarin und Pajor\u00e9 erweitert werden. Heute wird der Betrieb von Sohn Andrea und dessen Schwestern Elena und Claudia gef\u00fchrt. Gelegen im Dreieck von Barbaresco, Neive und Treiso arbeitet Sottimano seit Jahren nach biodynamischen Richtlinien um den Lagen-Charakter der f\u00fcnf Crus so pr\u00e4zise wie m\u00f6glich auf die Flasche zu bringen. Die Cru Cott\u00e0 ist die Hauslage des Weinguts und liegt zwischen den Gemeinden Neive und Barbaresco und um fasst rund 2,8 Hektar mit s\u00fcd-westlicher Ausrichtung. Die Reben sind zwischen 50 und 70 Jahre alt und verbinden die fleischigen, dichten Polyphenole der Neiver Lagen mit der kr\u00e4ftigen Tannin-Struktur Barbarescos. Die Verg\u00e4rung erfolgt stets spontan mit eigenen Hefen, die Mazeration betr\u00e4gt f\u00fcrgew\u00f6hnlich 25 Tage und auch die BSA erfolgt spontan in franz\u00f6sischer Eiche. Die Weine reifen 24 Monate im Fass (15% Neuholz, der Rest in Zweit- bis Viertbelegung), davon 12 Monate auf der Hefe. Der Holz-Einsatz bei der Weinbereitung wurde mit dem 2014-er Jahrgang modernisiert und l\u00e4sst die Weine mit immenser Vibration und Tiefe bereits in der Jugend zug\u00e4nglicher erscheinen. Die Weine werden ungesch\u00f6nt und ungefiltert gef\u00fcllt. <\/p>\n<h5>Farbe<\/h5>\n<p> Rubinrot, transparent und klar. <\/p>\n<h5>Nase<\/h5>\n<p> Der 2018 Cott\u00e0 von der Azienda Agricola Sottimano zeigt sich in der Nase komplex wie ein Rubics-Cube: Wie man es dreht und wendet, die initial fruchtigen Aromen nach Himbeeren und Kirschen werden alsbald erg\u00e4nzt durch w\u00fcrzige Noten nach Kr\u00e4utern wie Lorbeer, Thymian und Zedernholz in der Kopfnote. Aromen nach dunklem Tabak, schwarzem Tee und Kirschkonfit\u00fcre schlagen in die zeitgen\u00f6ssische Kerbe namens Umami und lassen die Lippen Richtung Glase sch\u00fcrzen. <\/p>\n<h5>Mund<\/h5>\n<p> Im Antrunk ist zun\u00e4chst fruchtbetont und klar, bis ihn sein jugendlich ungest\u00fcmes Naturell einholt. Die zarte Frucht und seine transparente Art t\u00e4uschen \u00fcber sein fest geschn\u00fcrtes Gerbstoff-Korsett hinweg, das ihn ordentlich striegelt. Akkurat gescheitelt hat er eine probate K\u00f6rperspannung, alles sitzt knitterfrei am rechten Fleck. Der Gerbstoff wie Schmirgelpapier feinster K\u00f6rnung verleiht ihm einen noblen Bitterton, der an dunkle Schokolade erinnert.
