Neben Weinbau betreibt die Domaine auch Oliven-, Obst- und Gem\u00fcseanbau sowie Forstwirtschaft und eine eigene Gastronomie. Abbatucci startete quasi als Arche, als man in den 1960er- und 1970er-Jahren die alten autochthonen Sorten bewahrte, w\u00e4hrend der moderne Weinbau auf internationale Sorten umschwenkte. Da die franz\u00f6sischen AOC-Regelungen die Verwendung dieser Sorten nur eingeschr\u00e4nkt zulassen, werden die Weine ausschlie\u00dflich als Vin de France, also Landwein, vermarktet. Der Betrieb arbeitet nach den Prinzipien der biodynamischen Landwirtschaft und ist Demeter-zertifiziert. Der 2023 Faustine Ros\u00e9 Vielles Vignes ist eine Cuv\u00e9e aus 90 % Sciaccarellu und 10 % Barbarossa. Die Trauben hierf\u00fcr wachsen auf gut 100 Metern Meeresh\u00f6he auf den granitreichen B\u00f6den des Tals. Die Ertr\u00e4ge sind mit knapp 25 hl\/ha eher niedrig. Es wird fr\u00fchmorgens gelesen, entrappt und sofort abgepresst. Der Wein wird bei 18 Grad vergoren und anschlie\u00dfend f\u00fcr f\u00fcnf Monate im Edelstahl ausgebaut, bevor er ungesch\u00f6nt und nur leicht filtriert gef\u00fcllt wird. <\/p>\n<h5>Farbe<\/h5>\n<p> Transparentes Rubinrot mit granatrotem Rand. <\/p>\n<h5>Nase<\/h5>\n<p> &#8220;Kombinat Kirsch&#8221; k\u00f6nnte man die Nase des 2022 Monte Bianco von Abbatucci vereinfacht umrei\u00dfen: Sauerkirschen, Schwarzkirschen, knallrote S\u00fc\u00dfkirschen sowie kleine, steinige Weichselkirschen nebst zartem Kernton f\u00fcllen seinen Fruchtkorb. Dazu kommen feine florale Noten nach Veilchen, Cassislaub sowie Wacholderbeeren und Piment, die das w\u00fcrzige Gegengewicht zu den Kirschkaskaden bilden. <\/p>\n<h5>Mund<\/h5>\n<p> Im Antrunk flie\u00dft er mit seidiger Eleganz \u00fcber den Gaumen, konturiert durch den engmaschigen und feink\u00f6rnigen Gerbstoff, der so fein wie Magnesiumstaub auf der Zunge wirkt. Die zarte Adstringenz bildet den Rahmen f\u00fcr die z\u00fcgellose Frucht. Aromatisch bereichern die Gerbstoffe durch ihr herb-gr\u00fcnes Naturell und verleihen ihm einen ungehemmten Trinkfluss.
