Im Jahre 2019 hat Boris Champy die 1984 von Didier Montchovet gegr\u00fcndete Domaine \u00fcbernommen. Champy, der zuvor Betriebe wie Dominus in Kalifornien, Louis Latour und Clos de Lambrays leitete, \u00fcbernahm die Domaine, die bereits in den 80er Jahren auf biologische und dann biodynamische Bewirtschaftung umgestellt wurde und damit das erste von Demeter zertifizierte Weingut im Burgund war. Das Weingut umfasst heute zw\u00f6lf Hektar in den einst k\u00fchleren Hautes-C\u00f4tes de Beaune, die f\u00fcr Boris Champy aufgrund des Klimawandels die Zukunft des Burgund darstellen. Der Cr\u00e9mant de Bourgogne verweist mit seinem Namen Elevation 434 auf die H\u00f6henmeter, auf denen die Wei\u00dfburgunder-Reben f\u00fcr diesen Schaumwein gedeihen. <\/p>\n

Nase<\/h5>\n

Der 2021 Elevation 434 Cr\u00e9mant de Bourgogne Extra Brut von Boris Champy duftet ein wenig wie ein orientalischer Basar: Trockenobst wie ged\u00f6rrte Aprikosen und Birnen, dazu die leicht oxidativen Noten angeschnittener \u00c4pfel, Honigmelone und Orangenbl\u00fctenwasser. M\u00fcrbekeks und Zitronat nebst einer Tasse frisch gebr\u00fchten Darjeelings sowie Bienenwachs und Quittengelee. <\/p>\n

Mund<\/h5>\n

Im Antrunk werden die gro\u00dfz\u00fcgigen Kaskaden der Nase konterkariert durch seine straffe S\u00e4ure und das ungest\u00fcme Mousseux. Aromatisch ist er am Gaumen breiter und facettenreicher, als seine strukturelle und s\u00e4urebeschleunigte Form es vermuten l\u00e4sst. Die Br\u00fccke wird gebaut durch den cremigen Schmelz und die wilden Oxi-Noten nach Apfel- oder Birnenschaumwein. Spannender Sch\u00e4umer aus Wei\u00dfburgunder.<\/p>\n
