Im Jahre 2019 hat Boris Champy die 1984 von Didier Montchovet gegr\u00fcndete Domaine \u00fcbernommen. Champy, der zuvor Betriebe wie Dominus in Kalifornien, Louis Latour und Clos de Lambrays leitete, \u00fcbernahm die Domaine, die bereits in den 80er Jahren auf biologische und dann biodynamische Bewirtschaftung umgestellt wurde und damit das erste von Demeter zertifizierte Weingut im Burgund war. Das Weingut umfasst heute zw\u00f6lf Hektar in den einst k\u00fchleren Hautes-C\u00f4tes de Beaune, die f\u00fcr Boris Champy aufgrund des Klimawandels die Zukunft des Burgund darstellen. Der Climat En Boeuf befindet sich im oberen Teil Pommards in voller Hanglage inmitten eines gut bel\u00fcfteten Talkessels. Die Parzellen werden mit traditionellen niedrigen Rebst\u00f6cken (10.000 Stock\/ha) im einfachen Guyot-Schnitt bewirtschaftet. Die Trauben werden bei optimaler Reife von Hand gelesen, gefolgt von der sanften Extraktion von 70 % Ganztrauben in Holzf\u00e4ssern. Die Weine werden durchschnittlich f\u00fcr 12 Monate ausgebaut, davon 50 % in neuen F\u00e4ssern. <\/p>\n

Der 2022 Pommard En Boeuf von Boris Champy duftet wie eine Schale frisch gepfl\u00fcckter kleiner Wild-Himbeeren, Cassis und Maulbeeren. Die Frucht zeigt sich freudvoll und saftig, erst dann kommen die typisch erdigen Noten nach Unterholz, Edelh\u00f6lzern wie Sandelholz und Noten von dunklem Kakao nebst einem L\u00f6ffel Pflaumenmus. <\/p>\n

\u00c4therisch mit transparenter Frucht und strahlendem Naturell ist dieser Pommard bereits in seiner Fruchtphase ein mehr als freudvoll zu gurgelnder Kollege. Mit feinem Extrakt unterlegt er den pr\u00e4senten Fruchteindruck, die reife S\u00e4ure durchwirkt ihn vom Antrunk bis ins \u00e4therisch k\u00fchle Finale mit fruchtig herbem Nachhall. Die packenden, doch polierten Gerbstoffe agieren als Wingman der S\u00e4ure und setzen alles auf die Trinky-Karte.<\/p>\n
