Die Trauben werden ausschlie\u00dflich von Hand geerntet und anschlie\u00dfend am Sortiertisch erneut selektiert. Die langsame G\u00e4rung und Mazeration mit \u2013 je nach Jahrgang \u2013 50\u202f% bis 70\u202f% entrappten Trauben erfolgt in gro\u00dfen Holzb\u00fctten \u00fcber einen Zeitraum von 15 bis 20 Tagen. Die G\u00e4rung erfolgt spontan mit wilden Hefen, f\u00fcr Aroma und Farbe wird t\u00e4glich umgepumpt. Anschlie\u00dfend werden die Trauben abgepresst, dann reifen sie f\u00fcr 12 Monate in gebrauchten Eichenf\u00e4ssern. Die Weine werden weder gefiltert noch gesch\u00f6nt, nach Zugabe geringer Mengen SO\u2082 gef\u00fcllt. <\/p>\n<h5>Farbe<\/h5>\n<p>\u00a0Dunkles Rubinrot mit violetten Reflexen und dunklem Kern. <\/p>\n<h5>Nase<\/h5>\n<p>\u00a0Der 2022 Les Santenots Volnay 1er Cru von Clos du Moulin aux Moines zeigt sich zun\u00e4chst erhaben im Glas. Er will nichts beweisen, ist weder laut noch leise \u2013 sondern einfach nur dort. Will man sich ihm n\u00e4hern, braucht es Geduld und gro\u00dfe Gl\u00e4ser. Trotz des offenherzigen Jahres 2022 ist er komplex, nicht wirklich vernagelt, aber auch alles andere als redselig. Nach rund 30 Minuten entbl\u00e4ttert er sich zaghaft, Schicht f\u00fcr Schicht wie ein Burgunder-Baumkuchen: dunkle Fr\u00fcchte, Steinobst, Maulbeeren, Holunder sowie florale Noten im Obertonbereich, die an Stockrosen erinnern. In der Herznote wird\u2019s dunkel: Kakaonibs, etwas Espresso-Crema, feuchter Waldboden, langer roter Pfeffer sowie Kirschkerne. Komplexe Angelegenheit. <\/p>\n<h5>Mund<\/h5>\n<p>\u00a0Die Komplexit\u00e4t der Nase setzt sich am Gaumen fort: Kraftvoll und vielschichtig entpackt er sich gaaanz langsam und zeigt sich zun\u00e4chst als dunkler, rubinroter Monolith, dessen Kanten erst rund gelutscht werden m\u00fcssen \u2013 zum Gl\u00fcck! Die Gerbstoffe verpacken ihn wie ein hedonistisches Luxusgut aus einer Pariser Boutique, die extrakts\u00fc\u00dfe Frucht ist von Sandel- und S\u00fc\u00dfholz gerahmt und vom reifen, weit geschwungenen S\u00e4urebogen an den Gaumen projiziert.
