NN und umfasst 0,18 Hektar. Die Reben wurden 1996 und 2001 mit einer Dichte von 10.000 St\u00f6cken pro Hektar gepflanzt. Die tiefgr\u00fcndigen und kiesigen B\u00f6den bestehen aus rotem Ton und Kalkstein. Der Name \u201eLes Famines\u201c geht eventuell auf das karge Terroir zur\u00fcck, das keine reichhaltigen Ertr\u00e4ge brachte. Die Trauben werden ausschlie\u00dflich von Hand geerntet und anschlie\u00dfend am Sortiertisch erneut selektiert. Die langsame G\u00e4rung und Mazeration mit \u2013 je nach Jahrgang \u2013 30\u202f% bis 70\u202f% entrappten Trauben erfolgt in gro\u00dfen Holzb\u00fctten \u00fcber einen Zeitraum von 15 bis 20 Tagen. Die G\u00e4rung erfolgt spontan mit wilden Hefen, f\u00fcr Aroma und Farbe wird t\u00e4glich umgepumpt. Anschlie\u00dfend werden die Trauben abgepresst, dann reifen sie f\u00fcr 12 Monate in gebrauchten Eichenf\u00e4ssern. Die Weine werden weder gefiltert noch gesch\u00f6nt, nach Zugabe geringer Mengen SO\u2082 gef\u00fcllt. <\/p>\n<h5>Farbe<\/h5>\n<p>\u00a0Dunkles Rubinrot mit zarten violetten Reflexen. <\/p>\n<h5>Nase<\/h5>\n<p>\u00a0In der Nase zeugt der 2022 Les Famines Volnay von Clos du Moulin aux Moines bereits den Dampfhammer: Vielschichtig und komplex entbl\u00e4ttert sich mit zunehmender Bel\u00fcftung sein kraftvolles Naturell. Dunkle Fr\u00fcchte gemischt mit knackig roter Beerenfrucht und Bergamotte, dazu kommen Noten nach nassem Boden, hellem Tabak und milden Gew\u00fcrzen. Mit dunklem, leicht rauchigem Naturell avisiert er gehobenes Burgunder-Vergn\u00fcgen. <\/p>\n<h5>Mund<\/h5>\n<p>\u00a0Der 2022er Jahrgang \u00f6ffnet auch bei diesem eleganten Burgunder das Trinkfenster bereits sehr fr\u00fch \u2013 und vor allem weit! Die dunkle Frucht mit schwarzem Touch zeigt sich fleischig und bissfest, die flauschigen Gerbstoffe eng gewoben mit aromatisch herbem Tiefgang. Der gehoben mittelkr\u00e4ftige Wein wird befeuert von reifer S\u00e4ure, die wie ein Souffleur im Hintergrund agiert und ihm die B\u00fchne \u00fcberl\u00e4sst.
