Grenache Blanc and Grenache Gris are combined here. The vines are 25 years old and grow at an altitude of 650 meters. Fermentation initially takes place spontaneously in steel tanks. During fermentation, the grapes are pressed and drawn into the bottles while fermenting. The further fermentation process then ensures a small amount of carbon dioxide in the bottle.

Colour

Pale, slightly cloudy straw yellow, restrained mousse, low perlage.

Nose

The nose reveals a strong yeasty impression. This is fortunately supported by herbal freshness and crisp fruit. Almond pastries, yeast plait with icing, and pancake batter are the dominant components on the nose. Freshly juiced pear and white peach stand out. Eucalyptus, mint, coriander, and lemon thyme deliver an enormous range of the finest ethereal aromas. These herbs can also be found in dried form. I also detect hints of green pea, fresh fennel, and artichoke.

Palate

Here, too, the carbonation is low. But it certainly manages to incorporate an enormous kick of freshness. The fruit is restrained, while the acidity dominates. This makes for a quick, uncomplicated drink. Instabile Pet Nat appears cool, extremely lean, and linear. The yeasty aroma is very subtle. The combination of pear juice with white peach is characteristic of it on the nose and palate. The herbal freshness reappears in the finish.
